q&a with caggie dunlop, singer
what is your go-to recipe when you have to cook for other people?
Roasted veggies, (that sometimes end up like ratatouille by accident!) and usually fish - probably salmon.
what do you cook when you can’t be bothered to cook?
Hmmm.... roast veggies! Haha, I am a roast veggie fanatic. But they are just so easy.
Who taught you how to cook?
I’m self-taught…hence the limited menu of roasted vegetables! Actually, I did do a brief cooking course in Edinburgh, not that you would ever know. I was definitely the worst in my class!
what would your last meal be?
My last meal, or my death row meal as I like to call it, would probably be lobster and chips, followed by banoffee pie.
what is your favourite restaurant in the world?
Well, the place that serves the best lobster and chips is a little beach restaurant in Barbados called Lobster Alive, which is great fun! Also, Plage Keller in Antibes.
what is your go-to restaurant in your city at moment?
Currently it’s my kitchen as everything is shut [due to Covid 19]. But, when things open up again, I am keen to go to River Cafe. It’s pretty classic and always a good meal.
what can’t you cook that you wish you could?
I have never cooked a roast chicken. Which is utterly shameful!
what is your favourite cuisine?
Italian for sure. However, I can’t eat pasta as much as I would like to as it makes my face instantly fat for some reason.
what have you had for breakfast, lunch, and dinner today?
Breakfast so far has been several cups of milky Earl Grey. I am about to have some eggs (a feta and spinach omelette is the current kitchen obsession) and lunch will probably be soup. For dinner, I will be making a kale, cranberry and feta salad; it’s very good. We are liking feta at the moment in case you can’t tell. I usually get quite hooked on one or two dishes and repeat until I am bored to death of them and can never look at a kale salad again. We are about at the half way mark I think.
is there anything you won’t eat?
I wouldn't be in a rush to eat any meat, really. I very rarely do. Usually when I think I am going to pass out because I am so iron deficient, I will have a steak. But it's about once every six months.
