gray jolliffe’s cheese and tomato sandwich
Ingredients (Serves 1)
Two slices of white bread
1 or 2 large tomatoes
Cheddar cheese
Flaky salt
Black pepper
Method
Put two slices of white bread face up on a big plate. Butter both lightly.
Take tomatoes out of fridge three hours ago. Slice them with a sharp knife on a board. Arrange them very carefully on the right hand slice of bread. Sprinkle liberally with salt.
Get Cheddar cheese, slice as thinly as possible and place generous amount of these on the left hand slice of bread. Sprinkle liberally with pepper.
Now for the difficult bit. Put the two halves on each hand and in the blink of an eye slap them together.
Speed is essential - done in slow motion everything falls out onto the table and you end up with an empty sandwich. This takes practice but very rewarding after a few attempts.
Next cut the completed sandwich in half with a sharp knife. Or into four if you’re really hungry.
